Foods like peanuts, eggs, and shellfish can cause allergies in susceptible individuals. The allergic reactions are obvious and can be diagnosed with a skin prick from an allergist. But there are hidden food allergies or sensitivities that are sometimes difficult to diagnose since they can be delayed in onset.even days after eating a particular food. Not surprisingly, with the changes in the food growth methods such as increased pesticide use, addictives, preservatives, and the rising concern over genetically modified there is an increased sensitivity as well to foods we all commonly eat. Symptoms of food sensitivities include fatigue, migraines, atopic dermatitis, irritable bowel syndrome, ulcerative colitis, Chron’s disease, recurrent infections, ADD/ADHD, acne, food cravings, obesity, arthritis, asthma, sinusitis and nasal congestion. Not necessarily the only cause but definitely a common cause of these symptoms is food sensitivity. These hidden food sensitivities can be uncovered by testing. With a change of diet, and elimination of these offending foods, there will be positive changes.
